Method

Preparing the Chiles

    Toast the Dried Chiles

    In a dry skillet over medium heat, toast the dried New Mexico chiles for about 2-3 minutes, turning frequently until fragrant. Be careful not to burn them.

    Remove the stems and seeds from the toasted chiles, then place them in a bowl and cover with hot water. Let them soak for about 20 minutes until they soften.

    Once softened, drain the chiles and place them in a blender. Add 1/2 cup of the soaking water and blend until smooth. Set aside the chile sauce.

Cooking the Meat and Beans
