Prepare the Mahi Mahi

Marinate the Fish
In a bowl, mix olive oil, garlic powder, paprika, cumin, salt, black pepper, and lime juice. Add the Mahi Mahi fillets and coat them well. Allow to marinate for at least 30 minutes.

Grill the Fish
Preheat the grill to medium-high heat. Grill the marinated Mahi Mahi fillets for about 4-5 minutes on each side or until they are cooked through and have nice grill marks.
Prepare the Aioli

Mix the Aioli
In a small bowl, combine mayonnaise, minced garlic, lime juice, and salt. Mix well until smooth and creamy. Adjust seasoning to taste.
Prepare the Guacamole

Mash the Avocados
In a bowl, mash the ripe avocados until smooth. Leave some chunks for texture if desired.

Add diced tomato, chopped red onion, cilantro, lime juice, and salt to the mashed avocado. Mix thoroughly and adjust salt to taste.
Prepare the House Slaw

Mix the Slaw
In a bowl, combine shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, and salt. Mix well until the cabbage is well coated.
Prepare the Pico de Gallo

Combine Pico de Gallo Ingredients
In a bowl, mix diced tomatoes, diced red onion, chopped cilantro, minced jalapeño, lime juice, and salt. Stir well and let sit for about 10 minutes to allow the flavors to meld.
Assemble the Tacos

Build the Tacos
On each tortilla, layer grilled Mahi Mahi, a dollop of aioli, guacamole, house slaw, and pico de gallo. Serve immediately.
