    Prepare the pork

    Trim any excess fat from the pork shoulder and cut it into large chunks.

    Chop the vegetables

    Dice the carrots, celery, potatoes, and onion. Chop the Hatch green chiles and set aside.

Cooking

    Sear the pork

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the pork chunks and sear on all sides until browned, about 5-7 minutes.

    Sauté the vegetables

    Remove the browned pork and set aside. In the same pot, add the diced onion, carrots, celery, and sauté until softened, about 5 minutes.

    Combine ingredients

    Return the pork to the pot and add the chopped Hatch green chiles, diced potatoes, chicken broth, ground cumin, salt, and black pepper. Stir to combine.

    Simmer the stew

    Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the pork is tender.

    Add beans

    During the last 15 minutes of cooking, add the canned white beans to the pot and stir to combine.

    Ladle the green chile pork stew into bowls and enjoy hot. Optionally, serve with crusty bread or tortillas.
