Cook the Pasta
In a large pot of boiling salted water, add the elbow macaroni and cook according to package instructions until al dente. Drain the pasta and set aside.

Add Milk
Gradually whisk in the milk, stirring continuously to prevent lumps. Continue cooking until the mixture thickens, about 5-7 minutes.

Incorporate Cream Cheese
Add the cream cheese to the saucepan and stir until fully melted and combined with the milk mixture.

Add Cheeses
Gradually add the sharp cheddar and Monterey Jack cheeses, stirring until completely melted and smooth.

Add Green Chiles and Spices
Stir in the diced green chiles, garlic powder, onion powder, salt, and black pepper. Mix well to combine all ingredients.
Combine and Serve

Combine Pasta and Cheese Sauce
Add the drained pasta to the cheese sauce and stir until the pasta is well coated.

Serve and Garnish
Transfer the Green Chile Mac & Queso to a serving dish. Garnish with sliced jalapeños, chopped cilantro, and crumbled queso fresco as desired. Serve warm.
