Cooking the Fries

Prepare and Cook Fries
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fries
Add the frozen French fries to the hot oil in batches, ensuring not to overcrowd the pot. Fry until golden brown and crispy, about 4-5 minutes.

Drain and Set Aside
Using a slotted spoon, remove the fries from the oil and drain on paper towels. Season with salt to taste.
Making the Green Chile Sauce

Combine Ingredients
In a medium saucepan, combine the canned green chiles, cream cheese, sour cream, garlic powder, onion powder, and salt.

Heat the Sauce
Cook over medium heat, stirring frequently until the cream cheese is melted and the sauce is smooth, about 5-7 minutes.
Assembling the Dish

Layer the Fries
Place the cooked fries on a large serving platter or individual serving plates.

Add the Green Chile Sauce
Pour the warm green chile sauce evenly over the fries.

Sprinkle the shredded cheddar cheese on top of the sauce, followed by the chopped green onions and sliced jalapeños.
