Cook the Meat
In a large skillet, heat the olive oil over medium heat. Add the choice of meat (beef, chicken, or pork) and season with salt and black pepper. Cook until browned and cooked through, about 7-10 minutes for beef or pork, and 5-7 minutes for chicken. Remove from skillet and set aside.

Assemble the Burritos
Lay out the flour tortillas on a flat surface. Divide the meat and chile mixture evenly among the tortillas. Top each with shredded cheese, a dollop of sour cream, and a sprinkle of fresh cilantro.

Fold in the sides of each tortilla and roll tightly from the bottom up. Place seam-side down on a plate or baking dish.
