Marinate the Protein
In a bowl, combine olive oil, garlic powder, cumin, smoked paprika, salt, and black pepper. Add the carne asada (or chicken or shrimp) and coat evenly. Cover and let marinate in the refrigerator for at least 30 minutes.

Prepare the Vegetables
While the protein is marinating, slice the bell peppers and onion into thin strips and set aside.

Cook the Protein
Heat a skillet or grill over medium-high heat. Once hot, add the marinated protein. Cook carne asada for about 5-7 minutes on each side until fully cooked. If using chicken, ensure it's cooked through (internal temperature of 165°F). For shrimp, cook until pink and opaque, about 2-3 minutes per side. Remove from heat and let rest for a few minutes before slicing.

Assemble the Fajitas
Warm the flour tortillas in a dry skillet or microwave until soft. Place a portion of the cooked protein and sautéed vegetables onto each tortilla. Top with sour cream and guacamole as desired.
