Preparing the Proteins
1. Prepare Chicken
Slice the chicken breast into thin strips and season with half of the fajita seasoning mixture.
2. Prepare Steak
Slice the steak into thin strips and season with half of the fajita seasoning mixture.
3. Prepare Shrimp
If using shrimp, season with half of the fajita seasoning mixture.
4. Prepare Vegetables
Slice the bell peppers and onion into thin strips.
Cooking the Fajitas
5. Cook Chicken
Heat a tablespoon of oil in a skillet over medium-high heat. Add the chicken strips and cook for 5-7 minutes until fully cooked. Remove and set aside.
6. Cook Steak
In the same skillet, add another tablespoon of oil and cook the steak strips for 3-5 minutes until desired doneness. Remove and set aside.
7. Cook Shrimp
In the same skillet, add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove and set aside.
8. Cook Vegetables
Add another tablespoon of oil if necessary, then add the bell peppers and onion to the skillet. Sauté for 5-7 minutes until softened.
Preparing Sides
9. Cook Rice
Prepare the rice according to package instructions.
10. Heat Refried Beans
Heat the refried beans in a small saucepan over medium heat until warmed through.
Assembling the Platter
11. Warm Tortillas
Warm the flour tortillas in a dry skillet over low heat for about 30 seconds on each side or wrap them in foil and place in a warm oven.
12. Serve
On a large platter, arrange the cooked proteins, sautéed vegetables, warm tortillas, guacamole, and sour cream. Serve with rice and refried beans on the side.
