Filling Preparation

    Cook the Meat

    In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Add Vegetables

    Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

    Season the Filling

    Stir in chili powder, cumin, salt, and black pepper. Cook for an additional 2 minutes to allow the spices to become fragrant.

    Add Cheese

    Remove from heat and stir in 1 cup of shredded cheese until melted and combined with the meat mixture.

Assembling the Enchiladas

    Prepare the Tortillas

    In a small skillet, heat olive oil over medium heat. Briefly fry each corn tortilla for about 10-15 seconds per side until pliable. Drain on paper towels.

    Fill the Tortillas

    Spoon about 2-3 tablespoons of the meat mixture onto the center of each tortilla. Roll tightly and place seam-side down in a greased baking dish.

    Add Enchilada Sauce

    Pour the enchilada sauce evenly over the rolled tortillas. Sprinkle the remaining cup of shredded cheese on top.

Baking

    Bake the Enchiladas

    Preheat the oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes, until the cheese is melted and bubbly.
