Preparation of the Enchilada Filling

    Cook the beef

    In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart as it cooks.

    Add onion and garlic

    Add the chopped onion and minced garlic to the skillet. Cook for about 5 minutes, or until the onion is translucent.

    Season the mixture

    Stir in the chili powder, cumin, salt, and black pepper. Cook for an additional 2-3 minutes until the spices are well combined.

    Add cheese

    Remove from heat and add 1 cup of shredded cheese to the meat mixture, stirring until melted and combined.

Preparation of the Enchilada Sauce

    Create the sauce

    In a saucepan, heat olive oil over medium heat. Add tomato sauce, water, chili powder, cumin, garlic powder, salt, and black pepper. Stir well.

    Simmer the sauce

    Bring the sauce to a simmer and let it cook for about 10 minutes, stirring occasionally until slightly thickened.

Assembling the Enchiladas

    Preheat the oven

    Preheat your oven to 375°F (190°C).

    Fill the tortillas

    Take a corn tortilla, add about 2-3 tablespoons of the meat mixture in the center, and roll it up tightly. Place seam side down in a baking dish.

    Repeat

    Repeat with the remaining tortillas and meat mixture.

    Pour sauce over

    Once all tortillas are assembled in the baking dish, pour the prepared enchilada sauce evenly over the top.

    Add remaining cheese

    Sprinkle the remaining shredded cheese on top of the enchiladas.

    Bake

    Cover with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serving

    Garnish and serve

    Remove from the oven and let cool for a few minutes. Serve topped with sour cream, chopped cilantro, diced tomatoes, and sliced jalapeños as desired.
