Preparing the Corn

Preheat the Grill
Preheat your grill to medium-high heat.

Prepare the Corn
Remove the husks and silk from the corn on the cob. Rinse the corn under cold water to remove any remaining silk.

Grill the Corn
Place the corn on the grill and cook for 10-15 minutes, turning occasionally, until the corn is charred and tender.
Making the Topping

Mix the Topping Ingredients
In a bowl, combine the mayonnaise, lime juice, and chili powder. Mix well to create a creamy dressing.

Add Cheese
Crumble the queso fresco or Cotija cheese into the mixture and stir gently to combine.

Season
Add salt to taste and mix again.
Assembling the Elote

Coat the Corn
Once the corn is grilled, remove it from the grill and let it cool slightly. Using a brush or spoon, generously coat each ear of corn with the mayonnaise mixture.

Garnish
Sprinkle additional crumbled cheese on top, followed by a dash of chili powder and chopped cilantro if desired.
