Entrees

Method

Entree Preparation

  1. 1

    Grilled Chicken Breast

Marinate the chicken breasts in olive oil, garlic, lemon juice, salt, and pepper for at least 30 minutes. Preheat the grill to medium-high heat. Grill the chicken for 6-8 minutes on each side until fully cooked and juices run clear.

  2. 2

    Salmon Fillets

Season the salmon fillets with salt, pepper, and a drizzle of olive oil. Preheat a skillet over medium heat and cook the salmon for 4-5 minutes on each side, or until the fish flakes easily with a fork.

  3. 3

    Vegetarian Stuffed Peppers

Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds. In a skillet, sauté onions, garlic, and diced vegetables of choice. Mix in cooked rice and season with salt, pepper, and herbs. Stuff the mixture into the peppers and bake for 25-30 minutes.

Side Preparation

  1. 4

    Garlic Mashed Potatoes

Peel and chop the potatoes, then boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot. Mash potatoes with butter, cream, minced garlic, salt, and pepper until smooth and creamy.

  2. 5

    Steamed Broccoli

Wash and cut broccoli into florets. Steam the broccoli over boiling water for 5-7 minutes until bright green and tender-crisp. Season with salt and a squeeze of lemon juice.

  3. 6

    Caesar Salad

In a large bowl, combine romaine lettuce, croutons, and parmesan cheese. For the dressing, whisk together olive oil, lemon juice, Dijon mustard, garlic, and anchovy paste. Toss salad with dressing before serving.

  4. 7

    Quinoa Salad

Cook quinoa according to package instructions. Allow to cool. In a large bowl, mix quinoa with diced cucumbers, cherry tomatoes, red onion, parsley, and a dressing made from olive oil, lemon juice, salt, and pepper.
