Method
Chili Colorado

Prepare the Chiles
Remove stems and seeds from the dried New Mexican red chiles. Rinse them under cold water.

Soak the Chiles
Place the cleaned chiles in a bowl and cover with hot water. Let them soak for about 20 minutes until softened.

Blend the Chiles
Drain the chiles and place them in a blender. Add a little bit of the soaking water (about 1/2 cup) and blend until smooth.

Cook the Pork
In a large pot, heat some oil over medium-high heat. Add the pork shoulder chunks and brown on all sides.

Add Spices and Sauce
Stir in the ground cumin, ground coriander, salt, black pepper, blended chiles, and chicken broth. Bring to a boil.

Simmer
Reduce heat to low, cover, and let simmer for about 2 hours or until the pork is tender. Stir occasionally.

Finish with Lime Juice
Once the pork is tender, stir in the lime juice and adjust seasoning if necessary.
Spanish Rice

Heat Oil
In a medium saucepan, heat vegetable oil over medium heat.

Toast Rice
Add long-grain white rice to the saucepan and toast until lightly golden, about 3-4 minutes.

Add Aromatics
Stir in minced garlic and cook for an additional minute until fragrant.

Add Remaining Ingredients
Add tomato sauce, chicken broth, salt, and black pepper. Stir to combine.

Cook Rice
Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and liquid is absorbed.

Fluff and Serve
Fluff the rice with a fork before serving.
Sopapilla

Mix Dry Ingredients
In a large bowl, whisk together all-purpose flour, baking powder, and salt.

Incorporate Butter
Add softened butter to the flour mixture and mix until crumbly.

Gradually add warm water until a soft dough forms. Knead gently for a minute.

Roll Out Dough
Roll out the dough on a floured surface to about 1/4 inch thickness.

Cut the dough into squares or triangles.

In a deep pan, heat oil over medium heat until hot.

Fry the dough pieces in hot oil until golden brown, about 2-3 minutes per side. Drain on paper towels.
