Beef Preparation

    Season the Beef

    Cut the chuck roast into 2-inch pieces and season with salt and black pepper.

    Brown the Beef

    Heat olive oil in a large pot over medium-high heat. Once hot, add the seasoned beef pieces in batches, browning on all sides. Remove the browned beef and set it aside.

Chile Sauce Preparation

    Toast the Chiles

    Remove the stems and seeds from the dried New Mexico chiles. Place them in a dry skillet over medium heat for about 3-5 minutes to toast lightly, stirring frequently until fragrant.

    Make the Chile Sauce

    In a blender, combine the toasted chiles, garlic cloves, chopped onion, cumin, oregano, and beef broth. Blend until smooth.

Cooking the Chile Colorado

    Combine Beef and Sauce

    Return the browned beef to the pot and pour the blended chile sauce over the beef. Stir to combine.

    Simmer the Beef

    Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for about 2 to 2.5 hours, or until the beef is tender.

    Once the beef is tender, serve the Chile Colorado hot, garnished with chopped cilantro and lime wedges.
