Prepare the Filling

Cook the Vegetables
In a skillet, heat the olive oil over medium heat. Add the diced onion, red bell pepper, and garlic. Sauté until the vegetables are softened, about 5 minutes.

Combine Ingredients
In a large bowl, combine the sautéed vegetables with shredded chicken, cumin, chili powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
Assemble the Enchiladas

Fill the Tortillas
Preheat your oven to 350°F (175°C). Take one flour tortilla and place about 1/3 cup of the chicken filling in the center. Roll the tortilla tightly around the filling and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas.

Add Sauce and Cheese
Once all tortillas are filled and placed in the baking dish, pour the enchilada sauce evenly over the top. Sprinkle shredded cheese generously over the sauce.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
