Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Filling
In a large mixing bowl, combine the black beans, corn, shredded cheese, chopped green onions, diced tomatoes, and chopped cilantro. Season with salt and black pepper to taste.

Assemble the Enchiladas
Spread a thin layer of red enchilada sauce on the bottom of a 9x13 inch baking dish. Take one blue corn tortilla, spoon about 2-3 tablespoons of the filling mixture onto the center, roll it up, and place it seam-side down in the baking dish. Repeat this process with the remaining tortillas and filling.

Add Sauce and Bake
Once all the tortillas are in the baking dish, pour the remaining red enchilada sauce over the top, making sure to cover all the tortillas. Sprinkle any leftover cheese over the top of the enchiladas. Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.

Serve
Remove the enchiladas from the oven and let them sit for a few minutes. Serve hot, garnished with sour cream, extra cilantro, and lime wedges on the side.
