Pork for Carnitas

Taco Assembly

Method

Preparing the Carnitas

  1. 1

    Season the Pork

In a large bowl, combine the orange juice, lime juice, minced garlic, cumin, oregano, salt, and black pepper. Mix well to create a marinade. Place the pork shoulder in a slow cooker and pour the marinade over it. Add the sliced onion and bay leaves.

  2. 2

    Slow Cook

Cover the slow cooker and cook on low for 8 hours or until the pork is tender and can be shredded easily with a fork.

  3. 3

    Shred the Pork

Once cooked, remove the pork from the slow cooker and place it on a cutting board. Shred the pork using two forks and return it to the slow cooker to soak up the juices.

Assembling the Tacos

  1. 4

    Warm the Tortillas

In a skillet over medium heat, warm the corn tortillas for about 30 seconds to 1 minute on each side until pliable.

  2. 5

    Fill the Tacos

Take a warm tortilla and add a generous amount of the shredded pork. Top with chopped fresh cilantro and diced red onion.

  3. 6

    Serve

Serve the tacos with lime wedges on the side and optional salsa. Enjoy your delicious carnitas tacos!
