Method

Marinating the Steak

    Prepare the Marinade

    In a bowl, mix together olive oil, lime juice, garlic powder, ground cumin, chili powder, salt, and black pepper.

    Marinate the Steak

    Place the flank steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

Cooking the Steak and Vegetables

    Cook the Steak

    Heat a grill or skillet over medium-high heat. Remove the steak from the marinade, letting excess marinade drip off. Cook the steak for about 5-7 minutes on each side or until it reaches your desired level of doneness. Remove from heat and let it rest for about 5 minutes before slicing.

    Sauté the Onions and Green Chiles

    While the steak is resting, slice the onion and green chiles. In the same skillet, add a little more olive oil if needed and sauté the onions until translucent, about 3-4 minutes. Add the sliced green chiles and cook for another 2 minutes until they are tender.

Preparing the Fries and Tortillas

    Cook the French Fries

    Prepare the French fries according to package instructions if using frozen, or fry fresh potatoes until golden and crispy.

    Heat the Tortillas

    Warm the flour tortillas on the grill or in a skillet for about 30 seconds on each side until they are pliable.

Serving

    Assemble the Dish

    Slice the marinated steak against the grain into thin strips. Serve the steak with sautéed onions and green chiles, alongside the French fries and warmed tortillas.
