Method

Preparation

  1. 1

    Cook the Meats

In a skillet over medium-high heat, cook the achiote marinated pork until browned and cooked through, about 5-7 minutes. Remove and set aside. In the same skillet, cook the arranchera steak for about 4-5 minutes on each side for medium-rare. Remove and let rest before slicing.

  2. 2

    Prepare the Fries

Peel and cut the potatoes into fries. Fry them in hot oil until golden brown and crispy. Drain on paper towels and season with salt.

  3. 3

    Assemble Torta

On a large flour tortilla, layer the sliced achiote pork, arranchera steak, and ham. Top with melted jack cheese, lettuce, sliced tomato, jalapenos, pickled onions, and sliced avocado. Spread mayo on the top tortilla before placing it on the stack.

Serving

  1. 4

    Serve the Torta

Cut the torta in half and serve it with a side of crispy fries.
