Preparation of Adobo Pork

    Cook the Pork

    In a slow cooker, add the pork shoulder, adobo sauce, garlic, salt, and black pepper. Cook on low for 6-8 hours or until tender. Shred the pork and set aside.

Grilling Vegetables

    Grill the Onions and Poblano

    In a skillet, heat olive oil over medium heat. Add the sliced onion and poblano pepper. Grill until softened and slightly charred, about 5-7 minutes.

Preparing Guacamole

    Make the Guacamole

    In a bowl, mash the ripe avocados. Add lime juice, salt, and chopped cilantro. Mix until combined and set aside.

Preparing Pico de Gallo

    Make the Pico de Gallo

    In a bowl, combine diced tomatoes, onion, jalapeño, lime juice, chopped cilantro, and salt. Mix well and set aside.

Assembling the Burrito

    Assemble the Burritos

    On each flour tortilla, layer shredded adobo pork, grilled onions, poblano, diced pineapple, guacamole, and pico de gallo. Roll the tortilla tightly to enclose the filling. Serve immediately.
