Pork Marinade

Marinating the Pork

    Prepare the Marinade

    In a bowl, combine the adobo seasoning, minced garlic, lime juice, and olive oil. Mix well.

    Marinate the Pork

    Cut the pork shoulder into small chunks and add it to the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.

Cooking the Pork

    Cook the Pork

    In a large skillet over medium heat, add the marinated pork and cook until tender and fully cooked, about 20-25 minutes. Remove from heat and shred the pork.

Making the Fries

    Prepare the Potatoes

    Wash and peel the potatoes, then cut them into thin strips to create fries.

    Fry the Potatoes

    In a deep pot, heat the olive oil over medium-high heat. Fry the potato strips in batches until golden and crispy, about 5-7 minutes per batch. Remove and drain on paper towels. Season with salt and pepper.

Assembling the Dish

    Serve the Pastor Fries

    On a large platter, layer the fries and top with the shredded adobo pork. Garnish with crumbled Cotija cheese, fresh cilantro, and serve with lime wedges and sour cream if desired.
