Prepare the Shrimp
In a medium skillet over medium heat, cook the shrimp until they turn pink and opaque, about 3-4 minutes. Stir in the ranchero sauce and cook for another 2 minutes.

Assemble the Quesadilla
On one half of each tortilla, layer the cooked shrimp mixture and sprinkle jack cheese on top. Fold the tortillas over to create a half-moon shape.

Cook the Quesadilla
In a large skillet over medium heat, add a little oil. Place the quesadillas in the skillet and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted.

Serve
Cut the quesadillas into wedges and serve hot topped with chopped cilantro, pico de gallo, and salsa La Puerta.
