Pork Preparation

    Marinate the Pork

    In a bowl, combine the pork shoulder with adobo sauce, pineapple chunks, and sliced jalapenos. Cover and let marinate for at least 1 hour, or preferably overnight in the refrigerator.

    Cook the Pork

    Preheat the grill or skillet over medium heat. Remove the pork from marinade and cook until fully cooked and tender, about 20-25 minutes. Let rest before slicing.

Quesadilla Assembly

    Assemble Quesadillas

    On half of each flour tortilla, layer with shredded jack cheese, sliced pork, and some chopped cilantro. Fold the tortilla over to create a half-moon shape.

    Cook Quesadillas

    Heat a skillet over medium heat. Cook each quesadilla for about 3-4 minutes on each side until golden brown and the cheese is melted. Remove from heat and let cool slightly before slicing.

Serving

    Serve with Salsas

    Serve the quesadillas warm with pico de gallo and salsa La Puerta on the side. Garnish with additional cilantro if desired.
