Prepare the Burrito Filling

    Cook the Beans

    In a pot, combine the Mayacoba beans with enough water to cover them. Bring to a boil, then reduce heat and simmer until tender, about 1 hour. Drain and set aside.

    Sauté Vegetables

    In a skillet, heat a little oil over medium heat. Add the diced onion and garlic; sauté until softened, about 3-5 minutes.

    Combine and Season

    Add the cooked beans to the skillet along with cumin, chili powder, salt, and pepper. Stir to combine and heat through for another 5 minutes.

Assemble the Burrito

    Fill the Tortillas

    Place about 1/4 of the bean mixture and 1/4 cup of shredded cheese onto each tortilla. Fold the sides and roll tightly.

    Cook the Burritos

    In a clean skillet, lightly toast each burrito over medium heat, seam side down, until golden brown and the cheese melts, about 2-3 minutes per side.

Prepare the Crema

    In a small bowl, combine sour cream, lime juice, garlic powder, and salt. Mix well until smooth.
