    Marinate the Pork

    In a large bowl, combine the achiote paste, orange juice, minced garlic, salt, and pepper. Add the pork shoulder and coat well. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat the oven to 300°F (150°C). Place the marinated pork in a large baking dish, cover with foil, and bake for 3-4 hours until tender. Remove from the oven and shred the pork with two forks.

Quesadilla Assembly

    Assemble the Quesadillas

    Heat a skillet over medium heat. Place one tortilla in the skillet and layer with shredded pork, jack cheese, and a second tortilla on top. Cook until golden brown, about 3-4 minutes per side. Repeat with remaining tortillas.

    Serve

    Cut the quesadillas into wedges and serve hot, topped with pickled onions, salsa La Puerta, and chopped cilantro.
