Prepare the Pork

    Marinate the Pork

    In a large bowl, mix the achiote paste, orange juice, lime juice, minced garlic, cumin, and salt. Add the pork shoulder to the marinade, ensuring it is fully coated. Cover and refrigerate for at least 4 hours, preferably overnight.

    Cook the Pork

    Preheat your oven to 300°F (150°C). Place the marinated pork in a baking dish, cover with foil, and bake for about 3 to 4 hours, or until the pork is fork-tender. Remove from the oven and let it rest before shredding.

Prepare the Fries

    Fry the Potatoes

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Carefully add the cut potatoes and fry until golden brown and crispy, about 5-7 minutes. Remove from oil and drain on paper towels. Sprinkle with salt to taste.

Assemble the Dish

    On a serving platter, layer the crispy fries, shredded achiote pork, and top with pickled red onions, chopped cilantro, and lime wedges. Serve immediately.
