Prepare the Carnitas

    Slow Roast the Pork

    Preheat your oven to 300°F (150°C). Place the pork shoulder in a large roasting pan. In a bowl, mix orange juice, lime juice, garlic, onion, cumin, salt, and pepper. Pour this mixture over the pork and cover the pan with foil. Roast for about 3-4 hours, or until the pork is tender and can be shredded easily.

    Shred the Pork

    Once the pork is cooked, remove it from the oven and let it rest for 15 minutes. Shred the pork using two forks and mix it back into the juices in the pan.

Prepare the Burrito Filling

    Cook the Vegetables

    In a skillet over medium heat, add a little oil and sauté the sliced onion and poblano pepper until they are soft and slightly charred, about 5-7 minutes.

    Prepare the French Fries

    Cook the French fries according to package instructions or until golden brown if making from scratch.

Assemble the Burritos

    Build the Burrito

    On a large flour tortilla, layer a generous amount of carnitas, French fries, sautéed onions and poblanos, shredded jack cheese, guacamole, and crema. Fold in the sides and roll up tightly.
