Preparing the Ribs

    Seasoning the Ribs

    Preheat your grill or oven to 300°F (150°C). Rub the pork ribs with salt, black pepper, garlic powder, and onion powder. Let them sit for about 30 minutes.

    Cooking the Ribs

    Place the ribs on the grill or in the oven and cook for about 2.5 to 3 hours, basting with the Chipotle & Blueberry BBQ sauce during the last 30 minutes of cooking.

Making the BBQ Sauce

    Combining Ingredients

    In a saucepan, combine ketchup, blueberries, chipotle peppers, apple cider vinegar, brown sugar, honey, Worcestershire sauce, salt, and black pepper. Bring to a simmer over medium heat and cook for 15 minutes until thickened, stirring occasionally.

Preparing the Potato Salad

    Cooking the Potatoes

    Boil the fingerling potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.

    Mixing the Salad

    In a bowl, combine cooled potatoes, olive oil, Dijon mustard, parsley, salt, and black pepper. Toss well to combine.

Making the Slaw

    Combining Ingredients

    In a bowl, mix the julienned Granny Smith apple, jicama, lime juice, cilantro, and salt. Toss until well combined.

Cooking the Broccolini

    Sautéing

    In a pan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add broccolini, salt, and black pepper. Sauté for about 5-7 minutes until tender.
