Preparation
- 1
Prepare the Soup Base
In a large pot, combine corn kernels, vegetable broth, shallots, and garlic. Bring to a boil over medium heat, then reduce heat and simmer for 15 minutes until the corn is tender.
- 2
Blend the Soup
Remove the pot from heat and let it cool slightly. Using an immersion blender or a regular blender, puree the mixture until smooth. Stir in heavy cream, salt, black pepper, and lemon juice.
- 3
Chill the Soup
Transfer the soup to a bowl or container and refrigerate for at least 2 hours or until fully chilled.
- 4
Prepare the Bacon Relish
In a skillet, cook chopped bacon over medium heat until crispy. Remove from heat and let it drain on paper towels.
- 5
Assemble the Dish
Serve the chilled corn soup in bowls, topped with the crispy bacon and fresh Dungeness crab meat.
