    Prepare the Tart Crust

    In a mixing bowl, combine the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the cold water, one tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

    Make the Mushroom Filling

    In a skillet over medium heat, sauté the onion and garlic until translucent. Add the chopped mushrooms and thyme, cooking until the mushrooms are softened and the moisture has evaporated. Stir in the heavy cream, Parmesan cheese, salt, and pepper. Cook for an additional 2-3 minutes, then remove from heat and let cool slightly.

    Assemble the Tarts

    Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut into circles to fit your tart pans. Press the dough into the pans and fill each with the mushroom mixture. Brush the edges with the beaten egg.

    Bake in the preheated oven for 20-25 minutes or until the crust is golden brown. Allow to cool slightly before serving.
