    Season the NY strip steaks with salt and black pepper. Heat olive oil in a grill pan over medium-high heat. Grill steaks for 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest before slicing.

    Cook elbow macaroni according to package instructions. Drain and set aside.

    Make the Cheese Sauce

    In a saucepan, melt butter over medium heat. Stir in flour to create a roux. Gradually whisk in milk, cooking until thickened. Add cheeses and green chiles, stirring until melted and smooth. Season with salt and pepper.

Caramelized Onion Jam

    In a skillet, melt butter over medium heat. Add sliced onions and cook slowly until softened and caramelized, about 30 minutes. Stir in brown sugar, balsamic vinegar, and salt, cooking for an additional 5 minutes.

Béarnaise Sauce

    In a small saucepan, combine shallots and white wine vinegar. Reduce over medium heat until only a few tablespoons remain. Remove from heat and let cool slightly. Whisk in egg yolks until combined. Gradually whisk in melted butter until emulsified. Stir in tarragon and season with salt.
