Marinade Preparation

    Prepare the Marinade

    In a large bowl, combine pineapple juice, chipotle peppers, minced garlic, cumin, oregano, salt, black pepper, and lime juice. Mix well.

    Marinate the Pork

    Cut the pork shoulder into small cubes and add to the marinade. Ensure all pieces are coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade and cook for about 8-10 minutes, stirring occasionally, until the pork is cooked through and has a nice char.

    Add Pineapple

    During the last few minutes of cooking, add the diced pineapple to the skillet or grill. Allow to cook until slightly caramelized, about 2-3 minutes.

Assembling the Tacos

    Warm the Tortillas

    In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

    Assemble the Tacos

    Place a generous portion of the pork and pineapple mixture onto each tortilla. Top with chopped onion and cilantro. Serve with lime wedges on the side.
