Prepare the Churro Dough

Boil the Mixture
In a medium saucepan, combine 1 cup of water, 1 cup of unsalted butter, 2 tablespoons of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium-high heat.

Add Flour
Once boiling, remove from heat and stir in 1 cup of all-purpose flour until the mixture forms a ball. Allow this dough to cool slightly.

Incorporate Eggs and Vanilla
Add 2 large eggs and 1 teaspoon of vanilla extract to the dough, one at a time, mixing well after each addition until the dough is smooth and well combined.
Prepare the Cinnamon Sugar

Mix Cinnamon Sugar
In a small bowl, combine 1 cup of granulated sugar and 2 tablespoons of ground cinnamon. Set aside.
Fry the Churros

Pipe the Dough
Transfer the churro dough to a piping bag fitted with a star tip. Pipe strips of dough directly into the hot oil, cutting them to your desired length (about 4-6 inches).

Fry Until Golden
Fry the churros for 2-4 minutes on each side or until they are golden brown and crispy. Make sure not to overcrowd the pan.
