In a cocktail shaker, muddle the fresh mint leaves gently to release their aroma.

Add the light rum, fresh lime juice, simple syrup, and pineapple juice to the shaker.

Fill the shaker with ice cubes and shake vigorously for about 15 seconds.

Strain the mixture into a tall glass filled with ice.

Top off the drink with ginger beer for a refreshing fizz.
