    Prepare the Coffee Mixture

    Brew the espresso coffee and allow it to cool slightly. Once cooled, stir in 50g of granulated sugar until dissolved. Set aside.

    Make the Mascarpone Mixture

    In a large mixing bowl, add the egg yolks and remaining 50g of granulated sugar. Whisk together until the mixture becomes pale and creamy. Gradually fold in the mascarpone cheese until smooth and well combined.

    Whip the Cream

    In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the mascarpone mixture until fully incorporated.

Assembly

    Dip the Ladyfingers

    Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy. Arrange a single layer of the soaked ladyfingers in the bottom of a rectangular serving dish.

    Layer the Mixture

    Spread half of the mascarpone mixture over the layer of ladyfingers, smoothing it out evenly.

    Repeat the Layers

    Add another layer of soaked ladyfingers on top of the mascarpone mixture, followed by the remaining mascarpone mixture. Smooth the top layer.

    Chill the Tiramisu

    Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld.

Finishing Touch

    Dust with Cocoa and Garnish

    Before serving, dust the top of the tiramisu with cocoa powder and shavings of dark chocolate for garnish.
