Pasta Preparation

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Vegetable Preparation

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the bell peppers, zucchini, carrots, and broccoli. Cook for 5-7 minutes until the vegetables are tender but still crisp.

    Add Cherry Tomatoes

    Stir in the cherry tomatoes and cook for an additional 2 minutes until they are slightly softened.

Sauce Preparation

    Make the Sauce

    Pour in the vegetable broth and bring to a simmer. Stir in the remaining 2 tablespoons of olive oil, Parmesan cheese, fresh basil, salt, and black pepper. Mix well and let it cook for another 2-3 minutes.

Combine and Serve

    Mix Everything Together

    Add the cooked pasta to the skillet with the vegetable mixture. Toss everything together to coat the pasta with the sauce. Adjust seasoning with more salt and pepper if needed.

    Serve warm, garnished with additional Parmesan cheese and fresh basil if desired.
