Prepare the Vegetables

Peel and dice the potatoes into small cubes. Chop the onion finely and mince the garlic.

Cook the Bacon

In a large pot, cook the bacon bits over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

Sauté the Onions and Garlic

In the same pot with the bacon drippings, add the chopped onion and cook until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.

Add Potatoes and Broth

Add the diced potatoes to the pot and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.

Blend the Soup

Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup to a regular blender in batches.

Add Cream and Seasonings

Stir in the heavy cream, butter, salt, and black pepper. Allow the soup to heat through for another 5 minutes.

Serve the Soup

Ladle the soup into bowls and top with crispy bacon bits, chopped chives, and shredded cheddar cheese.
