Cake Preparation

1. Preheat the Oven

Preheat your oven to 180°C (350°F). Grease and flour a round 9-inch cake pan.

2. Melt the Chocolate

In a heatproof bowl, melt 200g of dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

3. Mix Butter and Sugar

In a large mixing bowl, cream together 100g of unsalted butter and 120g of granulated sugar until light and fluffy.

4. Add Eggs

Beat in the 4 large eggs one at a time, mixing well after each addition.

5. Combine Mixtures

Slowly add the melted chocolate and 1 tsp of vanilla extract to the butter-sugar-egg mixture, stirring until well combined.

6. Add Dry Ingredients

Sift together 100g of all-purpose flour and 1 tsp of baking powder. Gradually fold the dry ingredients into the wet mixture until just combined.

7. Bake the Cake

Pour the batter into the prepared cake pan and bake for about 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Filling and Glazing

8. Prepare the Filling

Once the cake is completely cooled, slice it in half horizontally. Spread 200g of apricot jam evenly on the bottom layer before placing the top layer back on.

9. Make the Glaze

In a saucepan, heat 100ml of heavy cream until just boiling. Remove from heat and add 150g of dark chocolate, stirring until smooth and glossy.

10. Glaze the Cake

Pour the chocolate glaze over the top of the cake, allowing it to drip down the sides. Smooth it out with a spatula if necessary.

11. Set and Serve

Let the glaze set for at least 30 minutes before slicing. Serve slightly warm or at room temperature.
