Preparation
1. Prepare the Vegetables
Wash and chop the fresh basil leaves, tomatoes, and onion. Mince the garlic cloves.
Cooking
2. Sauté the Onion and Garlic
In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
3. Add Tomatoes and Broth
Add the chopped tomatoes to the pot, stirring well to combine. Pour in the vegetable broth and bring the mixture to a boil.
4. Season the Soup
Once boiling, reduce the heat to low, add salt and black pepper. Simmer for 15 minutes, allowing the flavors to meld.
5. Blend the Soup
Remove the pot from heat. Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half the soup and leave the rest as is.
6. Add Basil
Stir in the fresh basil leaves and let the soup sit for an additional 5 minutes to infuse the basil flavor.
Serving
7. Serve the Soup
Ladle the soup into bowls and garnish with additional fresh basil leaves and grated Parmesan cheese if desired. Serve hot.
