Cooking the Pasta
1. Boil Water
In a large pot, bring 4 cups of water to a rolling boil. Add 1 tsp of salt.
2. Cook Pasta
Add 2 cups of pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.
3. Drain and Cool
Once cooked, drain the pasta in a colander and rinse under cold water to stop the cooking process. Set aside to cool.
Preparing the Salad
4. Chop Vegetables
While the pasta cools, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and bell pepper, and finely chop the red onion.
5. Combine Ingredients
In a large bowl, combine the cooled pasta, chopped vegetables, and fresh basil.
Dressing the Salad
6. Make the Dressing
In a small bowl, whisk together 4 tablespoons of olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of garlic powder, 1 teaspoon of salt, and 0.5 teaspoon of black pepper.
7. Dress the Salad
Pour the dressing over the pasta salad and toss gently to coat all ingredients evenly.
Serving
8. Add Cheese (optional)
If using, sprinkle the crumbled feta cheese over the top of the salad.
9. Chill and Serve
Cover the salad with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled.
