1. Prepare the vegetables
Clean and slice the fresh mushrooms. Dice the onion, carrot, and celery. Mince the garlic cloves.

2. Sauté the vegetables
In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5 minutes until they begin to soften.
3. Add garlic and mushrooms
Add the minced garlic and sliced mushrooms to the pot. Cook for an additional 5-7 minutes, stirring occasionally, until the mushrooms have released their moisture and are tender.
4. Add broth and seasonings
Pour in the vegetable broth, and add the fresh thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes.
5. Blend the soup
After simmering, use an immersion blender to puree the soup until smooth. If using a regular blender, allow the soup to cool slightly before blending in batches.
6. Finish with cream and herbs
Return the blended soup to the pot, stir in the heavy cream, and add the chopped fresh parsley. Heat the soup gently until warmed through, but do not boil.
