Preparing the Custard Base

Step 1: Heat the Cream
In a medium saucepan, pour in the heavy cream and add the vanilla bean (split in half lengthwise). Heat over medium heat until the cream is hot but not boiling, stirring occasionally.

In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and creamy.

Once the cream is hot, remove it from the heat. Gradually pour the hot cream into the egg yolk mixture, whisking constantly to temper the eggs and prevent them from scrambling.
