Add Broccoli and Broth
Stir in the broccoli florets, vegetable broth, salt, black pepper, and dried thyme. Bring to a boil, then reduce heat and let simmer for 15 minutes, until the broccoli is tender.
Making the Creamy Mixture

Prepare Cornstarch Slurry
In a small bowl, mix the cornstarch with water until smooth. Set aside.

Blend the Soup
Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.

Add Cream and Cheese
Stir in the heavy cream and shredded sharp cheddar cheese. Cook over low heat until the cheese is melted and the soup is creamy.

Thicken the Soup
Add the cornstarch slurry to the soup, stirring continuously until it thickens, about 3-5 minutes.
