1. Clean the Clams
Rinse the clams under cold water to remove any sand or debris. Soak them in fresh water for about 30 minutes, then rinse again.

2. Sauté Aromatics
In a large pot, heat the olive oil over medium heat. Add minced garlic and diced shallots, sauté until fragrant and translucent.
3. Add Wine and Tomatoes/Broth
Pour in the white or red wine, depending on your choice. If making red Zuppa di Clams, add the crushed tomatoes. If making white, add chicken broth. Let it simmer for 5 minutes.
4. Cook the Clams
Add the cleaned clams to the pot. Cover and cook for about 7-10 minutes, or until the clams have opened. Discard any that do not open.
5. Finish and Serve
Stir in the chopped parsley and red pepper flakes. Season with salt and black pepper to taste. Serve hot with crusty bread.
