Prepare the Shrimp
In a bowl, season the shrimp with salt and black pepper. Set aside.

Coat the Shrimp
In a shallow dish, place the flour. In another bowl, beat the eggs. Dip each shrimp first in the flour, shaking off excess, then in the beaten eggs.

Fry the Shrimp
In a large skillet, heat the olive oil over medium heat. Once hot, add the shrimp in batches and cook for 2-3 minutes on each side until golden brown. Remove and place on paper towels.

Make the Sauce (for Francese)
In the same skillet, add the minced garlic and sauté for 30 seconds. Add 1/2 cup of white wine and 1/2 cup of chicken broth. Let it reduce by half, then stir in the chopped parsley.

Serve
Plate the shrimp and drizzle with Francese sauce or serve with marinara sauce or top with marinara and cheese for Parmigiana.
