Lobster Ravioli Ingredients

Method

Cooking Instructions

  1. 1

    Make the Ravioli Dough

In a large mixing bowl, combine flour and salt. Create a well in the center and add the egg and olive oil. Gradually mix until a dough forms. Knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

  2. 2

    Prepare the Filling

In a bowl, combine lobster meat, ricotta cheese, and black pepper. Mix until well combined.

  3. 3

    Roll Out the Dough

Once the dough has rested, divide it into four sections. Roll out each section into thin sheets using a pasta machine or rolling pin.

  4. 4

    Form the Ravioli

Place small spoonfuls of filling onto one sheet of dough, about 2 inches apart. Moisten the edges with water, then place another sheet of dough on top. Press down to seal and cut into individual ravioli.

  5. 5

    Cook the Ravioli

Bring a large pot of salted water to a boil. Cook the ravioli for about 4-5 minutes or until they float. Remove with a slotted spoon and set aside.

  6. 6

    Make the Vodka Sauce

In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until tender. Stir in crushed tomatoes and vodka. Simmer for 10 minutes, then add heavy cream and basil. Season with salt and pepper.

  7. 7

    Combine and Serve

Add the cooked ravioli to the sauce, gently stirring to coat. Serve hot, garnished with additional basil if desired.
