Mixed wild mushrooms seared with fresh herbs, garlic, olive oil and served over arugula

Clean the wild mushrooms with a damp cloth and slice them into bite-sized pieces.

Prep the Mushrooms

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Sauté the Garlic

Add the sliced mushrooms to the skillet. Sauté for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and tender.

Stir in the fresh thyme, parsley, salt, and black pepper. Cook for an additional 2-3 minutes.

In a large bowl, toss the arugula with the remaining 2 tablespoons of olive oil and a pinch of salt.

Place a bed of arugula on each plate, top with the sautéed mushrooms, and serve immediately.
