Preparation
1. Make the Gnocchi
Boil the potatoes until tender, then peel and mash them. Combine mashed potatoes with flour, egg, and salt to form a dough. Roll into logs and cut into small pieces to shape the gnocchi.
2. Prepare the Meat Ragout
In a large skillet, heat olive oil over medium heat. Add chopped onion, carrot, celery, and minced garlic. Sauté until softened. Add ground beef and pork, cook until browned. Stir in red wine, canned tomatoes, oregano, salt, and pepper. Simmer for 30 minutes.
3. Cook the Gnocchi
Bring a pot of salted water to a boil. Drop gnocchi into boiling water; they are done when they float to the surface. Remove with a slotted spoon.
4. Combine and Serve
Toss the cooked gnocchi with the meat ragout. Serve hot, garnished with Parmesan cheese.
