Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.

Sear the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for about 5-6 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Add Sun-Dried Tomatoes
Stir in the sun-dried tomatoes and cook for another minute.

Deglaze with Champagne
Pour in the champagne and bring to a simmer, scraping up any browned bits from the bottom of the skillet.

Make the Cream Sauce
Reduce the heat to low and stir in the heavy cream. Allow the sauce to simmer for about 5 minutes until slightly thickened.

Combine and Serve
Return the chicken to the skillet, coating it with the sauce. Cook for an additional minute to heat through. Garnish with fresh parsley and serve.
