Season the veal cutlets with salt and black pepper on both sides.

Dredge each veal cutlet in flour, shaking off the excess. Dip in beaten eggs, allowing excess to drip off, then coat with breadcrumbs, pressing gently to adhere.

Fry the Cutlets

In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded cutlets in batches, frying for 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

Preheat the oven to 375°F (190°C). In a baking dish, place the fried veal cutlets side by side. Top each cutlet with marinara sauce and a generous amount of mozzarella cheese.
